Description

A rich and creamy baked zucchini dish featuring a savory garlic cheese sauce and a toasted Parmesan crust. Perfect as a side dish or a light vegetarian main.


Ingredients

  • 3 medium zucchinis, sliced into rounds
  • 1/2 teaspoon salt (for sweating zucchini)
  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 2 cups sharp cheddar cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 3 cloves garlic, minced
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt (for sauce)

Instructions

  1. Preheat your oven to 350F (175C) and grease a 9×9 inch baking dish.
  2. Toss zucchini slices with 1/2 teaspoon salt in a bowl and let sit for 10 minutes. Pat them thoroughly dry with paper towels.
  3. In a saucepan over medium heat, melt the butter. Whisk in the flour and cook for 1 minute.
  4. Gradually whisk in the milk, stirring constantly until the sauce thickens and is smooth.
  5. Stir in the minced garlic, onion powder, pepper, and 1/4 teaspoon salt. Remove from heat and stir in 1.5 cups of the cheddar cheese until melted.
  6. Place the dried zucchini in the prepared baking dish and pour the cheese sauce over them, stirring to coat evenly.
  7. Top with the remaining 1/2 cup cheddar and all the parmesan cheese.
  8. Bake for 25-30 minutes until the top is golden brown and bubbling.
