- 4 oz cream cheese, softened
- 1/4 cup mayonnaise
- 1 cup sharp cheddar cheese, shredded
- 1 jalapeño, finely diced
- 1 tsp smoked paprika
- Salt and pepper to taste
Instructions
- Sauté corn in a skillet until golden brown.
- Stir in cream cheese and mayonnaise until smooth.
- Add diced jalapeños and smoked paprika; mix well.
- Fold in shredded cheddar cheese until melted.
- Transfer to a baking dish and top with extra cheese.
- Bake at 350°F for 15 minutes until bubbly.
