- 2 lbs Yukon Gold potatoes, peeled and thinly sliced
- 12 oz smoked sausage (Kielbasa or Andouille), sliced into coins
- 2 cups sharp cheddar cheese, shredded
- 1 cup heavy cream
- 1 small onion, finely diced
- 3 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp butter
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish with butter or oil.
- In a skillet over medium heat, melt 2 tablespoons of butter and sauté the diced onion and minced garlic until softened and fragrant, about 5 minutes.
- In a medium bowl, whisk together the heavy cream, paprika, salt, and black pepper until well combined.
- Place half of the thinly sliced potatoes in the bottom of the prepared baking dish in an even layer.
- Spread the sautéed onion and garlic mixture over the first layer of potatoes, then arrange the smoked sausage coins on top.
- Layer the remaining potato slices over the sausage.
- Pour the cream mixture evenly over the top of the potatoes, ensuring the liquid seeps into the layers.
- Sprinkle the shredded cheddar cheese evenly over the top of the casserole.
- Bake for 40-45 minutes, or until the potatoes are tender when pierced with a fork and the cheese is golden and bubbling.
- Remove from the oven and let the casserole rest for 10 minutes before serving.
