- 1.5 lbs chicken breast, cut into 1-inch cubes
- 1.5 cups long-grain white rice, uncooked
- 2 cups chicken broth
- 1 cup heavy cream
- 2 cups shredded mozzarella cheese
- 3 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh basil, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 375F (190C) and grease a 9×13 inch baking dish.
- Melt the butter in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the cubed chicken to the skillet. Season with salt and pepper, then cook for 3-5 minutes until the exterior is lightly seared. Remove from heat.
- Transfer the chicken and garlic mixture into the prepared baking dish.
- Stir in the uncooked white rice, ensuring it is evenly distributed among the chicken.
- Pour the chicken broth and heavy cream over the rice and chicken. Stir gently to combine.
- Cover the dish tightly with aluminum foil to seal in the steam.
- Bake for 30-35 minutes, or until the liquid is mostly absorbed and the rice is tender.
- Remove the foil and evenly sprinkle the shredded mozzarella cheese over the top.
- Return the dish to the oven, uncovered, for another 10-15 minutes until the cheese is melted and golden brown.
- Remove from the oven and immediately sprinkle with fresh parsley and basil. Let rest for 5 minutes before serving.
