Description

A rich, steamed holiday pudding featuring the tartness of dried cranberries and the aromatic brightness of fresh orange. A moist and dense festive dessert perfect for Christmas dinner.


Ingredients

  • 1 cup mixed dried fruits (raisins, currants)
  • 1 cup dried cranberries
  • 1/2 cup orange juice
  • 2 tablespoons brandy
  • 1/2 cup unsalted butter, softened
  • 1 cup dark brown sugar
  • 2 large eggs
  • Zest of 1 large orange
  • 1 cup breadcrumbs
  • 1 teaspoon mixed spice (cinnamon, nutmeg, cloves)

Instructions

  1. Combine mixed dried fruits, dried cranberries, orange juice, and brandy in a bowl. Soak for at least 2 hours or overnight.
  2. Cream the softened butter and dark brown sugar together until smooth.
  3. Beat in the eggs one at a time, then stir in the orange zest.
  4. Fold in the breadcrumbs and mixed spice until evenly combined.
  5. Stir the soaked fruit (and any remaining liquid) into the batter until distributed.
  6. Grease a pudding basin with butter and line the bottom with parchment paper. Spoon in the mixture and press down firmly.
  7. Cover the basin with parchment and a tight foil lid. Steam in a pot of simmering water for 6 hours or until a skewer comes out clean.
