Description

A traditional, steamed holiday pudding enriched with mixed dried fruits and the buttery crunch of toasted pecans. Perfect served with brandy butter or warm custard.

  • 1 cup mixed dried fruits (raisins, currants, sultanas)
  • 1/2 cup chopped dates
  • 1/2 cup toasted pecans, chopped
  • 1/2 cup brandy or dark rum
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1/2 cup breadcrumbs
  • 1 tsp mixed spice (cinnamon, nutmeg, clove)
  • 1 tbsp orange zest
  • 1/2 tsp salt

Instructions

  1. Toast the pecans in a dry pan over medium heat for 3-5 minutes until fragrant and lightly browned.
  2. Combine mixed dried fruits and dates with brandy in a bowl; cover and let soak for at least 2 hours.
  3. Cream the softened butter and brown sugar together in a large bowl until light and fluffy.
  4. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
  5. Stir in the breadcrumbs, mixed spice, orange zest, and salt until just combined.
  6. Fold in the soaked fruit (including the liquid) and the toasted pecans.
  7. Grease a 1-quart pudding basin with butter and spoon the mixture in, smoothing the top.
  8. Cover the basin with a circle of parchment paper and foil, securing it tightly with string.
  9. Place the basin in a steamer or a pot with simmering water; steam for 3 to 4 hours.
  10. Allow the pudding to cool in the basin for 30 minutes before carefully inverting it onto a plate.
