- 2 lbs ground beef
- 3 cups shredded sharp cheddar cheese
- 2 cups corn kernels
- 15oz can black beans, rinsed
- 14oz can diced tomatoes with juice
- 3 tbsp taco seasoning
Instructions
- Brown ground beef in a skillet and drain excess fat.
- Stir in taco seasoning and a splash of water.
- Fold in corn and black beans.
- Stir in diced tomatoes and simmer for 5 minutes.
- Transfer mixture to a 9×13 greased baking dish.
- Top with shredded cheddar cheese.
- Bake at 375°F for 20 minutes until bubbly.
