- 1 lb ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can (15 oz) kidney beans, drained
- 1 can (15 oz) sweet corn, drained
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef broth
- 1 tbsp smoked paprika
- 1 tsp ground cumin
- Salt and pepper to taste
Instructions
- Brown ground beef in a large pot over medium-high heat; drain half the fat.
- Sauté onions and garlic in the pot until softened.
- Deglaze the pot with a small amount of beef broth, scraping the bottom.
- Stir in smoked paprika and cumin, toasting for 1 minute.
- Add diced tomatoes, corn, and kidney beans; stir to combine.
- Pour in the remaining beef broth and bring to a boil.
- Reduce heat and simmer for 30 minutes until thickened.
