- 2 cups Beef Broth
- 1 can (14.5 oz) Diced Tomatoes
- 2 cups Small Pasta (Ditalini or Macaroni)
- 1 medium Onion, diced
- 2 medium Carrots, sliced
- 3 cloves Garlic, minced
- 1 tbsp Italian Seasoning
- 2 tbsp Olive Oil
- Salt and Pepper to taste
- Fresh Parsley for garnish
Instructions
- Heat olive oil in a large pot over medium-high heat.
- Add ground beef and brown until fully cooked, then drain excess fat.
- Stir in diced onion and carrots, sautéing until softened.
- Add minced garlic and Italian seasoning, cooking for 1 minute until fragrant.
- Pour in beef broth and diced tomatoes with their juices; bring to a boil.
- Reduce heat to low and simmer for 15-20 minutes.
- Stir in the uncooked pasta and cook until tender (about 8-10 minutes).
- Season with salt and pepper, garnish with parsley, and serve hot.
