A rich and velvety one-pan meal featuring tender potato gnocchi and golden seared chicken in a garlic parmesan cream sauce.

- 1 lb chicken breast, cubed
- 1 package (16 oz) potato gnocchi
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 2 cups fresh baby spinach
- 2 tbsp butter
- Salt and black pepper to taste
- 1 tbsp olive oil
Instructions
- Season chicken cubes with salt and pepper. Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat. Brown chicken until golden, then remove and set aside.
- In the same pan, add remaining butter and minced garlic. Sauté for 30 seconds until fragrant.
- Pour in heavy cream and bring to a gentle simmer over medium heat.
- Stir in Parmesan cheese until melted and sauce begins to thicken.
- Add gnocchi to the pan and simmer for 3-5 minutes until they float and are tender.
- Fold in the cooked chicken and baby spinach. Stir until spinach is wilted, then serve immediately.
