Ingredients

  • 1 cup all-purpose flour
  • 1 onion, diced
  • 3 carrots, sliced
  • 3 stalks celery, sliced
  • 3 cloves garlic, minced
  • 8 cups chicken stock
  • 1 cup wild rice, uncooked
  • 1.5 lbs chicken breast, cubed
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add diced onion, carrots, and celery; sauté until softened (about 8 minutes).
  3. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Sprinkle in flour and stir for 2 minutes to create a roux.
  5. Slowly whisk in chicken stock until smooth.
  6. Add uncooked wild rice and cubed chicken.
  7. Simmer, covered, for 40-50 minutes until rice is tender.
  8. Stir in heavy cream and simmer for another 5 minutes on low heat.
  9. Season with salt and pepper, and garnish with fresh parsley.
