- 1.5 lbs boneless skinless chicken breasts
- 1 cup uncooked wild rice
- 3 carrots, diced
- 2 celery stalks, diced
- 1 medium onion, diced
- 6 cups chicken broth
- 3 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 cup heavy cream
- Salt and pepper to taste
Instructions
- Place chicken, wild rice, carrots, celery, onion, and garlic into the slow cooker.
- Pour in the chicken broth and stir in the thyme, rosemary, salt, and pepper.
- Cover and cook on Low for 6-8 hours or High for 3-4 hours.
- Remove chicken breasts, shred with two forks, and return them to the pot.
- Stir in the heavy cream and cook for an additional 30 minutes on Low.
- Taste and adjust seasoning before serving hot.
