Ingredients

  • 1.5 lbs boneless skinless chicken breasts
  • 1 cup uncooked wild rice
  • 3 carrots, diced
  • 2 celery stalks, diced
  • 1 medium onion, diced
  • 6 cups chicken broth
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Place chicken, wild rice, carrots, celery, onion, and garlic into the slow cooker.
  2. Pour in the chicken broth and stir in the thyme, rosemary, salt, and pepper.
  3. Cover and cook on Low for 6-8 hours or High for 3-4 hours.
  4. Remove chicken breasts, shred with two forks, and return them to the pot.
  5. Stir in the heavy cream and cook for an additional 30 minutes on Low.
  6. Taste and adjust seasoning before serving hot.
