- 1 lb chicken breast, cubed
- 1 lb penne pasta, uncooked
- 2 tbsp olive oil
- 1 bell pepper, diced
- 1/2 onion, finely diced
- 2 tbsp Cajun seasoning
- 3 cloves garlic, minced
- 3 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Set the Instant Pot to Sauté mode and heat olive oil over medium heat.
- Add diced bell pepper and onion, sautéing for 3-4 minutes until softened.
- Add cubed chicken and Cajun seasoning, browning the meat for about 5 minutes.
- Pour in 1/2 cup of chicken broth and scrape the bottom of the pot to remove all browned bits.
- Add the remaining chicken broth and minced garlic, stirring to combine.
- Layer the uncooked penne pasta on top of the liquid, pressing down slightly but not stirring.
- Lock the lid, set the valve to Sealing, and cook on High Pressure for 5 minutes.
- Perform a quick pressure release immediately.
- Stir in the heavy cream and Parmesan cheese until the sauce is smooth and thickened.
- Garnish with fresh parsley and serve immediately.
