- 1 1/2 cups graham cracker crumbs
- 6 tbsp melted unsalted butter
- 16 oz cream cheese, softened
- 3/4 cup granulated sugar
- 1 cup pumpkin puree
- 2 large eggs
- 1 tsp vanilla extract
- 1 tbsp pumpkin pie spice
- 1/2 tsp salt
Instructions
- Preheat oven to 325F and line an 8×8 inch baking pan with parchment paper.
- Mix graham cracker crumbs and melted butter in a bowl, then press firmly into the bottom of the pan.
- Bake the crust for 10 minutes, then remove and let cool slightly.
- Beat softened cream cheese and sugar until smooth using a hand mixer or stand mixer.
- Stir in pumpkin puree, vanilla extract, pumpkin pie spice, and salt until combined.
- Add eggs one at a time, mixing on low speed just until incorporated.
- Pour the filling over the crust and bake for 35-40 minutes until edges are set but center wobbles slightly.
- Cool to room temperature, then refrigerate for at least 4 hours before slicing into bars.
