- 1 lb tomatillos, husked and halved
- 1 jalapeño, halved
- 3 garlic cloves, unpeeled
- 8 oz Monterey Jack cheese, shredded
- 8 oz White American cheese, shredded
- 1/4 cup whole milk
- 1 tbsp lime juice
- 2 tbsp fresh cilantro, chopped
- 1/2 tsp salt (or to taste)
Instructions
- Place the halved tomatillos, jalapeño, and unpeeled garlic cloves on a baking sheet.
- Broil the vegetables for 5-7 minutes until the skins are charred and blistered.
- Remove the garlic from its skins and blend all roasted vegetables in a food processor until mostly smooth.
- In a pot over low heat, melt the Monterey Jack and American cheeses, stirring constantly.
- Stir the blended tomatillo mixture into the melted cheese until fully combined.
- Slowly stir in the milk until the dip reaches your preferred thickness.
- Remove from heat and stir in the lime juice, chopped cilantro, and salt.
