Description

A rich and comforting slow cooker meal featuring tender beef chunks in a velvety garlic and parmesan cream sauce.


Ingredients

Scale
  • 2 lbs beef chuck roast, cubed
  • 6 cloves garlic, minced
  • 3 cups beef broth
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 1 lb rotini pasta
  • 2 tbsp olive oil
  • Salt and black pepper to taste

Instructions

  1. Sear beef cubes in olive oil until browned on all sides.
  2. Place beef and minced garlic in the slow cooker.
  3. Add beef broth and season with salt and pepper.
  4. Cook on LOW for 6-8 hours until beef is tender.
  5. Boil rotini pasta separately until al dente.
  6. Stir heavy cream and parmesan into the slow cooker during the last 30 minutes.
  7. Fold in the cooked pasta and serve hot.
