Description

Rich and buttery slow-cooked potatoes infused with garlic and fresh herbs. A creamy, hands-off side dish that is perfect for any meal.


Ingredients

  • 3 lbs Yukon Gold potatoes, cubed
  • 1/2 cup unsalted butter, melted
  • 4 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup fresh parsley, chopped
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

Instructions

  1. Cube potatoes into uniform 1-inch pieces and place in slow cooker.
  2. Pour melted butter and minced garlic over the potatoes.
  3. Sprinkle salt and pepper over the top and toss gently to coat.
  4. Cover and cook on Low for 6-8 hours or High for 3-4 hours.
  5. Stir in heavy cream during the last 30 minutes of cooking.
  6. Fold in fresh parsley just before serving.
