Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach

Instructions

  1. Preheat oven to 400F.
  2. Combine ground chicken, breadcrumbs, paprika, salt, and pepper in a bowl.
  3. Roll into small meatballs and place on a baking sheet.
  4. Bake for 15-20 minutes until golden and cooked through.
  5. Melt butter in a pan, sauté garlic, then stir in heavy cream.
  6. Whisk in Parmesan cheese until thickened.
  7. Stir in spinach until wilted.
  8. Add meatballs to sauce and toss to coat.
