Description

Ingredients

  • 12 oz Spanish chorizo, diced
  • 2 large sweet potatoes, peeled and cubed (1/2 inch)
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 tsp smoked paprika
  • 2 tbsp olive oil
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Heat a large pot over medium heat. Add the diced chorizo and sauté until browned and the oil is rendered.
  2. Add the diced onion to the pot and cook for about 5 minutes until translucent.
  3. Stir in the minced garlic and smoked paprika, cooking for 1 minute until fragrant.
  4. Add the cubed sweet potatoes and stir to coat them in the seasoned oil for 2-3 minutes.
  5. Pour in the broth and bring to a boil. Reduce heat to low and simmer for 20-25 minutes until potatoes are tender.
  6. Use an immersion blender to pulse the soup a few times until slightly creamy, leaving some chunks intact.
  7. Stir in the fresh parsley and season with salt and pepper before serving.
