- 12 oz Spanish chorizo, diced
- 2 large sweet potatoes, peeled and cubed (1/2 inch)
- 1 medium onion, finely diced
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 tsp smoked paprika
- 2 tbsp olive oil
- 1/4 cup fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- Heat a large pot over medium heat. Add the diced chorizo and sauté until browned and the oil is rendered.
- Add the diced onion to the pot and cook for about 5 minutes until translucent.
- Stir in the minced garlic and smoked paprika, cooking for 1 minute until fragrant.
- Add the cubed sweet potatoes and stir to coat them in the seasoned oil for 2-3 minutes.
- Pour in the broth and bring to a boil. Reduce heat to low and simmer for 20-25 minutes until potatoes are tender.
- Use an immersion blender to pulse the soup a few times until slightly creamy, leaving some chunks intact.
- Stir in the fresh parsley and season with salt and pepper before serving.
