- 4 boneless, skinless chicken breasts
- 4 ounces brie cheese, sliced
- 1/2 cup cranberry sauce
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Cut a pocket into the side of each chicken breast, being careful not to cut through the other side.
- Stuff each pocket with a slice of brie and a generous spoonful of cranberry sauce.
- Rub the outside of the chicken with olive oil, then season with salt, pepper, and garlic powder.
- Heat a skillet over medium-high heat and sear the chicken for 3-5 minutes per side until golden brown.
- Transfer the skillet to the oven and bake for 10-15 minutes, or until the internal temperature reaches 165°F.
- Remove from the oven and let the chicken rest for 5 minutes before serving.
