- 1 lb chicken breast, cubed
- 1/2 cup Panko breadcrumbs
- 1 tsp garlic powder
- 2 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 28 oz can crushed tomatoes
- 4 cups chicken broth
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil, torn
- Salt and black pepper to taste
Instructions
- Season chicken with salt, pepper, and garlic powder, then coat in Panko breadcrumbs.
- Heat olive oil in a large pot over medium-high heat and sear chicken until golden brown; remove and set aside.
- In the same pot, sauté diced onion and minced garlic until translucent.
- Pour in a small amount of broth and deglaze the pot, scraping the bottom for flavor.
- Add the crushed tomatoes and the rest of the chicken broth, bringing to a simmer for 15 minutes.
- Return the seared chicken to the pot and simmer for another 5-8 minutes until cooked through.
- Turn off the heat and stir in the mozzarella and Parmesan cheese until melted.
- Garnish with fresh basil and serve hot.
