- 1 lb ground beef
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) pinto beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 cup frozen or canned corn
- 4 cups beef broth
- 1 tbsp chili powder
- 1 tsp ground cumin
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium-high heat and brown the ground beef until fully cooked. Drain excess fat.
- Add diced onions and minced garlic to the pot, sautéing for 3-5 minutes until translucent.
- Stir in chili powder and cumin, cooking for 1 minute to toast the spices.
- Pour in diced tomatoes and beef broth, scraping the bottom of the pot to release brown bits.
- Stir in the drained kidney beans, pinto beans, and corn.
- Bring to a boil, then reduce heat to low. Cover and simmer for 20-30 minutes.
