Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 cup frozen or canned corn
  • 4 cups beef broth
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium-high heat and brown the ground beef until fully cooked. Drain excess fat.
  2. Add diced onions and minced garlic to the pot, sautéing for 3-5 minutes until translucent.
  3. Stir in chili powder and cumin, cooking for 1 minute to toast the spices.
  4. Pour in diced tomatoes and beef broth, scraping the bottom of the pot to release brown bits.
  5. Stir in the drained kidney beans, pinto beans, and corn.
  6. Bring to a boil, then reduce heat to low. Cover and simmer for 20-30 minutes.
