Description

Ingredients

  • 1.5 lbs chicken breasts
  • 1/2 cup chicken broth
  • 3 tbsp lemon juice
  • 2 tbsp capers, drained
  • 3 cloves garlic, minced
  • 2 tbsp butter, chilled
  • 1 tbsp cornstarch
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Place chicken breasts in the bottom of the crockpot.
  2. Whisk together chicken broth, lemon juice, and minced garlic; pour over chicken.
  3. Sprinkle capers evenly over the top.
  4. Cover and cook on LOW for 6 hours or HIGH for 3 hours.
  5. Stir in cold butter during the last 30 minutes of cooking.
  6. Mix cornstarch with a bit of water and stir in if a thicker sauce is desired.
  7. Garnish with fresh parsley before serving.
