Description

A refreshing and vibrant salad combining juicy seared shrimp with creamy avocado and a zesty lime-honey vinaigrette. Perfect as a light lunch or an elegant appetizer.


Ingredients

  • 1 lb jumbo shrimp, peeled and deveined
  • 2 ripe Hass avocados, cubed
  • 1/4 cup fresh lime juice
  • 3 tbsp extra virgin olive oil
  • 1 tbsp honey
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • Salt and black pepper to taste
  • 1 tbsp olive oil for searing

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  2. Add shrimp and sear for 2-3 minutes per side until pink and opaque. Remove from pan and let cool slightly.
  3. In a small bowl, whisk together lime juice, 3 tbsp olive oil, honey, salt, and pepper until emulsified.
  4. In a large mixing bowl, combine the cooled shrimp, cubed avocado, and sliced red onion.
  5. Pour the vinaigrette over the ingredients and gently fold together using a spatula to avoid mashing the avocado.
  6. Garnish with chopped cilantro and serve immediately or chill for 15 minutes.
