Description

A juicy, sweet, and savory tropical twist on pulled pork. Slow-cooked to perfection with pineapple and ginger for a melt-in-your-mouth texture.


Ingredients

  • 4 lb pork shoulder (pork butt)
  • 1 cup pineapple juice
  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 2 tbsp apple cider vinegar
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • Salt and black pepper to taste

Instructions

  1. Season the pork shoulder generously with salt and pepper on all sides.
  2. Place the pork in the slow cooker.
  3. In a separate bowl, whisk together pineapple juice, brown sugar, soy sauce, apple cider vinegar, minced garlic, and grated ginger.
  4. Pour the sauce over the pork, ensuring it is evenly coated.
  5. Cover and cook on Low for 8 hours or High for 4-5 hours until the meat is tender.
  6. Remove the pork to a large platter and shred using two forks.
  7. Return the shredded pork to the slow cooker and stir to combine with the remaining juices.
  8. Serve warm on buns, over rice, or in tacos.
