- 4 lb pork shoulder (pork butt)
- 1 cup pineapple juice
- 1/2 cup brown sugar
- 1/4 cup soy sauce
- 2 tbsp apple cider vinegar
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- Salt and black pepper to taste
Instructions
- Season the pork shoulder generously with salt and pepper on all sides.
- Place the pork in the slow cooker.
- In a separate bowl, whisk together pineapple juice, brown sugar, soy sauce, apple cider vinegar, minced garlic, and grated ginger.
- Pour the sauce over the pork, ensuring it is evenly coated.
- Cover and cook on Low for 8 hours or High for 4-5 hours until the meat is tender.
- Remove the pork to a large platter and shred using two forks.
- Return the shredded pork to the slow cooker and stir to combine with the remaining juices.
- Serve warm on buns, over rice, or in tacos.
