Ingredients

  • 2.5 cups all-purpose flour
  • 1 cup unsalted butter, chilled and cubed
  • 3 cups fresh blueberries
  • 3 cups fresh strawberries, sliced
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 egg (for wash)
  • Ice water as needed

Instructions

  1. Pulse flour and chilled butter in a processor until coarse crumbs form; add ice water until dough clumps.
  2. Roll dough to 1/8 inch thickness and press into a pie dish.
  3. Toss blueberries and strawberries separately with sugar and cornstarch.
  4. Arrange blueberries in a rectangle in the top left corner.
  5. Layer strawberry slices in horizontal stripes across the remaining area.
  6. Brush edges with egg wash and bake at 375F for 45-50 minutes.
