Description
A succulent salmon fillet baked atop a bed of garlic-buttered spinach. Finished with fresh lemon for a bright, healthy, and restaurant-quality dinner.

- 2 salmon fillets (6oz each)
- 4 cups fresh baby spinach
- 3 tbsp unsalted butter, melted
- 3 cloves garlic, minced
- 1 lemon (half sliced, half juiced)
- 1 tsp kosher salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Line a baking sheet with parchment paper and spread the baby spinach in an even layer.
- Pat salmon fillets dry with paper towels and season both sides with salt and pepper.
- Combine melted butter and minced garlic in a small bowl.
- Brush the garlic butter generously over the top of the salmon fillets.
- Place the salmon fillets on top of the spinach bed.
- Bake for 12-15 minutes, or until the internal temperature reaches 145°F.
- Drizzle with fresh lemon juice and garnish with lemon slices before serving.
