Description

A succulent salmon fillet baked atop a bed of garlic-buttered spinach. Finished with fresh lemon for a bright, healthy, and restaurant-quality dinner.


Ingredients

  • 2 salmon fillets (6oz each)
  • 4 cups fresh baby spinach
  • 3 tbsp unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 lemon (half sliced, half juiced)
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper and spread the baby spinach in an even layer.
  3. Pat salmon fillets dry with paper towels and season both sides with salt and pepper.
  4. Combine melted butter and minced garlic in a small bowl.
  5. Brush the garlic butter generously over the top of the salmon fillets.
  6. Place the salmon fillets on top of the spinach bed.
  7. Bake for 12-15 minutes, or until the internal temperature reaches 145°F.
  8. Drizzle with fresh lemon juice and garnish with lemon slices before serving.
