- 2 cups snap peas
- 1 cup carrots, thinly sliced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 3 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 1 teaspoon toasted sesame oil
- Green onions and sesame seeds for garnish
Instructions
- Whisk together soy sauce, honey, grated ginger, and cornstarch in a small bowl until smooth.
- Heat vegetable oil in a wok or large skillet over medium-high heat until shimmering.
- Add shrimp in a single layer and sear for 2 minutes per side until pink. Remove shrimp from pan and set aside.
- Add carrots and snap peas to the same pan. Sauté for 3-4 minutes until tender-crisp.
- Push vegetables to the side and add minced garlic to the center. Stir for 30 seconds until fragrant.
- Pour the sauce over the vegetables and stir constantly for 1-2 minutes until the glaze thickens and bubbles.
- Return the shrimp to the pan and toss to coat in the sauce.
- Stir in the toasted sesame oil, remove from heat, and garnish with green onions and sesame seeds.
