A festive twist on the classic Caesar salad featuring crisp romaine, a creamy homemade dressing, and melted mozzarella ghost croutons.

- 1 large head of romaine lettuce, chopped
- 1 baguette, sliced into rounds
- 4 oz fresh mozzarella cheese
- 1/2 cup grated parmesan cheese
- 1 egg yolk
- 2 tablespoons fresh lemon juice
- 1 tablespoon anchovy paste
- 1/2 cup extra virgin olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the baguette rounds into ghost shapes using a small knife.
- Place ghost-shaped bread on a baking sheet and toast for 5 minutes.
- Place a small slice of mozzarella on top of each toasted bread ghost and bake for another 2-3 minutes until melted.
- In a medium bowl, whisk together the egg yolk, lemon juice, and anchovy paste.
- Slowly whisk in the olive oil in a steady stream until the dressing is thick and creamy.
- Stir in the grated parmesan and minced garlic, then season with black pepper.
- Place the chopped romaine in a large bowl and toss with the dressing until evenly coated.
- Arrange the salad on a platter and top with the warm mozzarella ghosts.
