A nutritious, lighter version of the classic Italian soup featuring lean sausage, hearty kale, and creamy potatoes.


Ingredients

Scale
  • 1 lb lean Italian sausage
  • 4 cups chicken broth (low sodium)
  • 3 large Yukon Gold potatoes, diced
  • 3 cups chopped kale, stems removed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1/2 cup unsweetened almond milk or light cream
  • Salt and black pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium-high heat and brown the sausage until fully cooked, breaking it into crumbles.
  2. Add diced onion and garlic to the pot, sautéing for 3-5 minutes until translucent.
  3. Pour in chicken broth and add diced potatoes; bring to a boil then simmer for 15 minutes.
  4. Stir in chopped kale and cook for 2-3 minutes until wilted.
  5. Reduce heat to low and stir in milk or light cream until combined.
  6. Season with salt and pepper to taste and serve hot.
