Description

A hearty and nutritious one-pot meal combining tender chicken breast and earthy brown lentils. Perfect for cold weather and high-protein meal prepping.


Ingredients

  • 1 lb chicken breast or thighs, cubed
  • 1 cup dried brown lentils, rinsed
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 tsp dried thyme
  • 1 bay leaf
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat and brown the chicken cubes until golden on all sides. Remove chicken and set aside.
  2. In the same pot, add diced onion, carrots, and celery. Sauté for 5-7 minutes until softened.
  3. Stir in minced garlic and dried thyme, cooking for about 1 minute until fragrant.
  4. Pour in one cup of chicken broth and scrape the bottom of the pot to release the browned bits.
  5. Add the remaining broth, rinsed lentils, bay leaf, and the browned chicken back into the pot.
  6. Bring to a boil, then reduce heat to low and simmer for 30-40 minutes until lentils are tender.
  7. Remove the bay leaf, season with salt and pepper, and garnish with fresh parsley before serving.
