Description
A hearty and nutritious one-pot meal combining tender chicken breast and earthy brown lentils. Perfect for cold weather and high-protein meal prepping.

- 1 lb chicken breast or thighs, cubed
- 1 cup dried brown lentils, rinsed
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 tsp dried thyme
- 1 bay leaf
- 2 tbsp olive oil
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium-high heat and brown the chicken cubes until golden on all sides. Remove chicken and set aside.
- In the same pot, add diced onion, carrots, and celery. Sauté for 5-7 minutes until softened.
- Stir in minced garlic and dried thyme, cooking for about 1 minute until fragrant.
- Pour in one cup of chicken broth and scrape the bottom of the pot to release the browned bits.
- Add the remaining broth, rinsed lentils, bay leaf, and the browned chicken back into the pot.
- Bring to a boil, then reduce heat to low and simmer for 30-40 minutes until lentils are tender.
- Remove the bay leaf, season with salt and pepper, and garnish with fresh parsley before serving.
