- 1.5 lbs chicken breast or thighs, cubed
- 2 tbsp olive oil
- 1 medium onion, diced
- 2 carrots, sliced
- 3 cloves garlic, minced
- 2 tbsp curry powder
- 1 medium apple, peeled and diced
- 6 cups chicken broth
- 1/2 cup uncooked basmati rice
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat and brown the chicken on all sides. Remove chicken and set aside.
- Add onion and carrots to the pot and sauté until softened.
- Stir in garlic and curry powder, cooking for 1 minute until fragrant.
- Pour in a splash of broth to deglaze the pot, scraping up the brown bits.
- Add the remaining broth, diced apple, and rice. Return chicken to the pot.
- Bring to a boil, then reduce heat and simmer covered for 20 minutes.
- Stir in lemon juice and season with salt and pepper before serving.
