Ingredients

Scale
  • 1.5 lbs chicken breast or thighs, cubed
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 3 cloves garlic, minced
  • 2 tbsp curry powder
  • 1 medium apple, peeled and diced
  • 6 cups chicken broth
  • 1/2 cup uncooked basmati rice
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat and brown the chicken on all sides. Remove chicken and set aside.
  2. Add onion and carrots to the pot and sauté until softened.
  3. Stir in garlic and curry powder, cooking for 1 minute until fragrant.
  4. Pour in a splash of broth to deglaze the pot, scraping up the brown bits.
  5. Add the remaining broth, diced apple, and rice. Return chicken to the pot.
  6. Bring to a boil, then reduce heat and simmer covered for 20 minutes.
  7. Stir in lemon juice and season with salt and pepper before serving.
