- 2 cups cooked turkey, shredded or diced
- 1 cup brown lentils, rinsed
- 1 large onion, diced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 6 cups turkey or chicken broth
- 1 tbsp olive oil
- 1 tbsp fresh lemon juice
- 1/4 cup fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté for 6-8 minutes until softened.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Pour in the broth and bring to a boil, then reduce heat to a simmer.
- Add rinsed lentils and simmer for 20-30 minutes until tender but not mushy.
- Stir in the cooked turkey and cook for another 10 minutes to heat through.
- Remove from heat, stir in lemon juice and fresh parsley. Season with salt and pepper to taste.
