- 1 lb ground turkey
- 1/2 cup breadcrumbs
- 1 large egg
- 2 cloves garlic, minced
- 1 small onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 6 cups chicken or turkey broth
- 2 tbsp olive oil
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- In a bowl, combine ground turkey, breadcrumbs, egg, salt, and pepper. Mix gently and form into 1-inch meatballs.
- Heat olive oil in a large pot over medium heat. Brown the meatballs on all sides, then remove and set aside.
- In the same pot, sauté onion, carrots, and celery until softened (about 5-7 minutes).
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Pour in the broth and scrape the bottom of the pot to release brown bits.
- Add the browned meatballs back into the pot and bring to a gentle simmer.
- Cook for 15-20 minutes until meatballs are cooked through and vegetables are tender.
- Stir in fresh parsley and season with extra salt or pepper before serving.
