Ingredients

  • 1 lb ground turkey
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 6 cups chicken or turkey broth
  • 2 tbsp olive oil
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine ground turkey, breadcrumbs, egg, salt, and pepper. Mix gently and form into 1-inch meatballs.
  2. Heat olive oil in a large pot over medium heat. Brown the meatballs on all sides, then remove and set aside.
  3. In the same pot, sauté onion, carrots, and celery until softened (about 5-7 minutes).
  4. Stir in the minced garlic and cook for 1 minute until fragrant.
  5. Pour in the broth and scrape the bottom of the pot to release brown bits.
  6. Add the browned meatballs back into the pot and bring to a gentle simmer.
  7. Cook for 15-20 minutes until meatballs are cooked through and vegetables are tender.
  8. Stir in fresh parsley and season with extra salt or pepper before serving.
