Description

A creamy, rich cheesecake topped with cinnamon-spiced apples and a crunchy oat crumble. The perfect fusion of a classic cheesecake and a rustic apple crisp.


Ingredients

  • 1.5 cups graham cracker crumbs
  • 6 tbsp melted unsalted butter
  • 24 oz softened cream cheese
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 3 Granny Smith apples, peeled and sliced
  • 1/2 cup brown sugar
  • 1 tsp ground cinnamon
  • 1 tbsp cornstarch
  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup cold unsalted butter, cubed
  • 1/4 cup brown sugar (for crumble)

Instructions

  1. Preheat oven to 325F and grease a 9-inch springform pan.
  2. Combine graham cracker crumbs and melted butter; press firmly into the bottom of the pan and bake for 10 minutes, then cool.
  3. Beat cream cheese and granulated sugar until smooth. Add eggs one at a time, then stir in vanilla extract.
  4. Pour the batter over the crust. Place the pan in a larger roasting pan filled with an inch of hot water and bake for 45-50 minutes until edges are set.
  5. While cheesecake cools, sauté apple slices with cinnamon, 1/2 cup brown sugar, and cornstarch until tender.
  6. Mix oats, flour, cold cubed butter, and 1/4 cup brown sugar until crumbly.
  7. Spread the cooked apples over the cooled cheesecake, top with the oat crumble, and bake at 350F for 15-20 minutes until golden brown.
