- 1 lb ground turkey
- 1 cup pure pumpkin puree
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 2 tbsp chili powder
- 1 tbsp ground cumin
- 1/2 tsp ground cinnamon
- 2 cups beef or vegetable broth
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onions and sauté until translucent, then stir in minced garlic for 1 minute.
- Add ground turkey to the pot. Break the meat apart with a spoon and cook until browned and no longer pink.
- Stir in chili powder, cumin, and cinnamon. Cook for 2 minutes to toast the spices.
- Add diced tomatoes and pumpkin puree. Stir well, scraping the bottom of the pot to incorporate browned bits.
- Stir in the rinsed kidney beans and broth until the mixture is well combined.
- Reduce heat to low and simmer gently for 20-30 minutes, stirring occasionally.
- Season with salt and pepper to taste. Serve hot with desired toppings.
