- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 tbsp vanilla bean paste
- 2 cups diced fresh peaches
- 1 cup fresh raspberries
- 2 tbsp lemon juice
- 1/4 tsp salt
Instructions
- Simmer raspberries with 1 tablespoon of sugar over medium heat for 5-8 minutes, then strain through a sieve and chill the syrup.
- Toss diced peaches with lemon juice and set aside.
- Whisk together heavy cream, milk, remaining sugar, and salt until sugar is fully dissolved.
- Stir in vanilla bean paste until evenly distributed.
- Pour the mixture into an ice cream maker and churn until it reaches a soft-serve consistency.
- Gently fold in the diced peaches and drizzle the chilled raspberry syrup over the top, swirling lightly with a spatula.
- Transfer to a chilled container and freeze for at least 4 hours before serving.
