- 3/4 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda

- 1/2 teaspoon ground nutmeg
- 1 1/2 cups dried mixed fruit (raisins, currants, candied peel)
Instructions
- Preheat oven to 350F (175C) and line baking sheets with parchment paper.
- Cream the softened butter and brown sugar in a large bowl until light and fluffy.
- Beat in the egg and vanilla extract until smooth.
- In a separate bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
- Gradually stir the dry ingredients into the wet ingredients until just combined.
- Fold in the dried mixed fruit using a spatula until evenly distributed.
- Refrigerate the dough for 30 minutes to prevent over-spreading.
- Scoop rounded tablespoons of dough onto the baking sheets, spacing them 2 inches apart.
- Bake for 10-12 minutes, or until edges are golden but centers remain soft.
- Allow to cool on the pan for 5 minutes before moving to a wire rack.
