- 24 pecan halves
- 1/2 cup unsalted butter
- 1 cup packed brown sugar
- 1/4 cup light corn syrup
- 1/4 cup heavy cream
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350°F and toast pecan halves on a baking sheet for 5-7 minutes until fragrant.
- Line a baking sheet with parchment paper and a silicone mat.
- Combine butter, brown sugar, corn syrup, and heavy cream in a saucepan over medium heat.
- Bring the mixture to a boil, then simmer until it reaches 240°F on a candy thermometer.
- Arrange pecans on the prepared sheet and spoon a small amount of hot caramel onto each pecan.
- Let the caramel set for 30 minutes at room temperature.
- Melt chocolate chips in 30-second intervals in the microwave, stirring until smooth.
- Spoon melted chocolate over the set caramel and spread to the edges of the pecan.
- Refrigerate for 20 minutes until the chocolate is completely firm.
