Instructions
- Preheat your oven to 350F and line two large baking sheets with parchment paper.
- Cream the softened butter, brown sugar, and granulated sugar in a large bowl until light and fluffy.
- Beat in the eggs one at a time, then stir in the peppermint and vanilla extracts.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- Gradually add the flour mixture to the wet ingredients, mixing on low speed until just combined.
- Fold in the chocolate chips and crushed peppermint candies by hand using a spatula.
- Cover the dough and refrigerate for 30 minutes to prevent over-spreading.
- Scoop rounded tablespoons of dough onto the prepared baking sheets, spacing them 2 inches apart.
- Bake for 10-12 minutes, or until the edges are golden but the centers remain soft.
- Allow cookies to cool on the pan for 5 minutes before transferring to a wire rack.
