- 1 cup brown sugar
- 1/2 cup pumpkin puree
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 cup semi-sweet chocolate chunks
- 1 cup mini marshmallows
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter and brown sugar until light and fluffy.
- Stir in the pumpkin puree and vanilla extract until well combined.
- In a separate bowl, whisk together flour, baking soda, and cinnamon.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Gently stir in the chocolate chunks and half of the mini marshmallows.
- Scoop rounded tablespoons of dough onto the prepared baking sheet.
- Press the remaining marshmallows onto the top of each cookie mound.
- Bake for 10-12 minutes until edges are golden but centers remain soft.
- Cool on the pan for 5 minutes before transferring to a wire rack.
