Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg, vanilla extract, and orange gel food coloring until the color is uniform.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually stir the dry ingredients into the wet mixture until just combined; do not overmix.
- Roll the dough into 24 balls (about 2 tablespoons each) and slightly flatten them.
- Use a toothpick to score light vertical lines into each ball to create pumpkin ridges.
- Bake for 10 to 12 minutes or until the edges are set but the centers are still soft.
- Allow cookies to cool on the pan for 5 minutes before transferring to a wire rack.
- Once cooled, press chocolate chips into the dough for eyes and a mouth, then garnish with Halloween sprinkles.
