- 4 salmon fillets (6oz each)
- 1 lb baby gold potatoes, halved
- 3 tbsp butter
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 large lemon, juiced and zested
- 1/4 cup fresh dill, chopped
- Salt and black pepper to taste
Instructions
- Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat.
- Add halved potatoes and cook for 8-10 minutes until golden brown and tender.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Push potatoes to the side and place salmon fillets in the center, skin-side down.
- Sear salmon for 4-5 minutes per side until internal temperature reaches 145F.
- Add remaining butter, lemon juice, zest, and fresh dill to the pan.
- Spoon the lemon-dill butter over the salmon and potatoes for 2 more minutes before serving.
