Description

A vibrant one-pan meal featuring succulent salmon fillets and crispy baby potatoes tossed in a bright lemon-butter and fresh dill sauce.


Ingredients

  • 4 salmon fillets (6oz each)
  • 1 lb baby gold potatoes, halved
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 large lemon, juiced and zested
  • 1/4 cup fresh dill, chopped
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat.
  2. Add halved potatoes and cook for 8-10 minutes until golden brown and tender.
  3. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Push potatoes to the side and place salmon fillets in the center, skin-side down.
  5. Sear salmon for 4-5 minutes per side until internal temperature reaches 145F.
  6. Add remaining butter, lemon juice, zest, and fresh dill to the pan.
  7. Spoon the lemon-dill butter over the salmon and potatoes for 2 more minutes before serving.
