Description

A hearty and comforting vegetarian soup featuring earthy brown lentils, creamy potatoes, and tangy crumbled feta cheese.


Ingredients

  • 1 cup brown or green lentils, rinsed
  • 3 medium Yukon Gold potatoes, peeled and cubed
  • 1 large onion, diced
  • 2 medium carrots, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 tsp dried thyme
  • 1/2 cup crumbled feta cheese
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onions and carrots; sauté for 5-7 minutes until translucent.
  3. Stir in minced garlic and dried thyme; cook for 1 minute until fragrant.
  4. Add cubed potatoes and rinsed lentils to the pot and stir for 2-3 minutes.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat to low, cover, and simmer for 25-30 minutes or until lentils and potatoes are tender.
  7. Remove from heat and stir in half of the crumbled feta cheese.
  8. Season with salt and pepper to taste.
  9. Ladle into bowls and garnish with remaining feta and fresh parsley.
