Description

Individual-sized cheesecakes topped with caramelized pineapple for a tropical, creamy treat.


Ingredients

  • 1/2 cup brown sugar
  • 4 tbsp melted butter
  • 12 canned pineapple tidbits
  • 16 oz cream cheese, softened
  • 1/3 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup graham cracker crumbs

Instructions

  1. Preheat oven to 325°F and grease a mini-muffin tin.
  2. Combine melted butter and brown sugar; spoon into the bottom of each cup.
  3. Place one pineapple tidbit on top of the sugar mixture in each cup.
  4. Beat cream cheese and granulated sugar until smooth.
  5. Mix in eggs and vanilla extract on low speed until just combined.
  6. Spoon cheesecake batter over the pineapple pieces.
  7. Bake for 18-22 minutes until edges are set.
  8. Cool for 10 minutes, then invert onto a plate.
