- 1 lb boneless skinless chicken breast, cut into strips
- 2 cups diced potatoes (sweet or russet)
- 3 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (optional for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- Pat chicken dry, then season with salt, pepper, oregano, thyme and garlic.
- Coat chicken with 1 tbsp olive oil and 1/4 cup parmesan, toss to coat.
- Arrange chicken on a baking sheet and scatter diced potatoes around it.
- Drizzle potatoes with remaining olive oil, sprinkle on the rest of the garlic, salt, pepper, and a tablespoon of parmesan, toss lightly.
- Bake for 20-25 minutes until the chicken is golden brown and the potatoes are tender.
- Remove from oven, garnish with parsley, and serve hot.
