  • 2 minced garlic cloves

  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • ½ cup chopped fresh parsley
  • 1 medium red onion, cut into wedges
  • 1 red bell pepper, cut into 1‑inch pieces
  • 1 green bell pepper, cut into 1‑inch pieces
  • Wooden skewers, soaked in water for 30 min

Instructions

  1. Whisk olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, pepper, and half the parsley in a bowl.
  2. Add beef cubes, toss to coat, and refrigerate for 20–25 minutes.
  3. Preheat grill to medium‑high (400°F).
  4. Thread beef, onion, and peppers onto soaked skewers, alternating.
  5. Brush kabobs with remaining marinade, then grill 6–8 minutes, turning every 2 minutes.
  6. When beef is browned, remove, rest 2 minutes, sprinkle remaining parsley and serve.
