- 4 cups corn kernels
- 1 cup crumbled Cotija cheese
- 1/2 cup mayonnaise

Instructions
- Cook rotini pasta until al dente, drain, and rinse with cold water.
- Char corn kernels in a hot skillet until golden brown spots appear.
- Whisk mayonnaise, sour cream, lime juice, and chili powder until smooth.
- Combine chilled pasta and charred corn in a large bowl.
- Fold in the creamy dressing until evenly coated.
- Stir in cotija cheese and cilantro, then chill for 2 hours before serving.
