Instructions
- Preheat oven to 325F.
- Combine graham cracker crumbs and melted butter; press into mini muffin tins.
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing on low speed.
- Stir in vanilla extract.
- Fill crusts 3/4 full with batter.
- Bake for 15-18 minutes until edges are set but center jiggles.
- Cool and refrigerate for 4 hours.
