Description

A hearty Middle Eastern dish featuring nutty bulgur and earthy lentils topped with sweet caramelized onions and a cooling cucumber mint yogurt sauce.


Ingredients

  • 1 cup coarse bulgur
  • 1 cup brown lentils, rinsed
  • 2 large onions, thinly sliced
  • 1/4 cup olive oil
  • 1 tsp ground cumin
  • 3 cups water or vegetable broth
  • 1 cup Greek yogurt
  • 1 medium cucumber, grated and drained
  • 2 tbsp fresh mint, chopped
  • 1 tbsp lemon juice
  • Salt and black pepper to taste

Instructions

  1. Sauté sliced onions in olive oil over medium heat until deep golden brown.
  2. Stir in cumin and cook for 30 seconds until fragrant.
  3. Add rinsed lentils and bulgur to the pot, stirring to coat in oil.
  4. Pour in water or broth, bring to a boil, then simmer covered for 20-25 minutes.
  5. Remove from heat and let the grains rest covered for 10 minutes before fluffing.
  6. Mix Greek yogurt, drained grated cucumber, chopped mint, and lemon juice in a bowl.
  7. Serve the warm grains with a generous dollop of the cold yogurt sauce on top.
